This is one of my favorite recipes. I goes well with meats, rice and
even pasta !!! I love it and I hate it. I love to eat it ..I hate it because
I cry ...cry.... cry ....chopping so many onions !!!
P.S. This dish I learned from my mother...I loved it when she prepared it !
MAIN INGREDIENTS: ZUCHINNI SQUASH, ONIONS, GREEN PEPPERS,
TOMATO SAUCE, OLIVE OIL.
Start with the zucchini...if you start with the onions...you will start crying
and the tears will not let you see !!! Peel like like this....
At this point start thinking how you would like to chop up all your credit
card debts.....
Then think green....and think about how you would like to have some
extra cash. CHOP...CHOP ... the peppers, or the pepper if it is large.
Now that you are ready to cry....get those onions. Spaniards cook with
a lot of onions....that is why they are known as Spanish Onions...Have
you ever heard Flamenco singing ? Well, my hypothesis is that it was
created by spanish women in the kitchen while chopping onions !!!!
Cry a river with those onions....make those tears useful and bring out
your frustrations !!!!!!!!! Now....calm down...it's almost over.... you
should have this:
Heat the oil....well ....until it is hot....
Throw everything into your cheap IKEA wok/skillet.....
Toss around like the thoughts in your head......add salt, white pepper
and bay leaf. I must say ...bay leaf and white pepper is optional...save
yourself some work...
Splash the tomato sauce in the pan...and remember it's o.k. to curse if
you got some on your pajama!
Now ...stop and admire the beautiful colors......sigh....ok not that long...it will burn
Stir ....stir.....stir...yawn......add a little wine...white...red or pink....doesn't
matter...
Some sugar....everybody needs some....sorry ...out of focus. It is hard to
cook and shoot photos at the same time....
Cover and simmer until everything is as tender as your heart.....
OK ....NOW... STOP LAUGHING AT MY COOKWARE!!
DRY YOUR TEARS!!!
IT IS..WHAT IT IS....
THE IMPORTANT THING IS THE RESULT .....VOILA !!!!!!
ONCE IT IS ON THE PLATE ....IT DOES NOT MATTER WHAT THE PAN LOOKS
LIKE...THAT'S MY VIEW ON IT...
Next recipe....SMASHED POTATOES....However let me enjoy this song...
it's perfect for my "Cry Me a River "PISTO".....
This one sounds wonderful - and even healthy! I dread those onion tears, though...
